
Dam Pukh is a Traditional Persian dish that is very common among Pashtun and Baltit Regions of Pakistan because of the love of meat especially Mutton. It is cooked on slow flames and the unique thing about this dish is Mutton being cooked slowly and the natural juices mixing well with chilies, pepper, yogurt, and spices. Dum Pukh is a delicious recipe that is commonly served at Eid dinners and wedding receptions. This recipe takes about an hour to prepare and can serve from 5-10 people.
Here’s a list of ingredients you need to start.
- Mutton 1 kg
- Yogurt 1/2 kg
- Onion 4-5 slices
- Garlic paste 1 tbsp
- Oil 1/2 cup
- Ilaichi 4-5 ct
- Red peppers 7-10 whole
- Garam masala 2 tbsp
- Salt 1 1/2 tsp
How to Prepare
Start by putting mutton in oil, onions, and red chilies in a pan.
Mix yogurt with Garam Masala and then pour over the meat.
Add salt to taste, some Ilaichi, and garlic paste after that.
Seal the pan with some flour but you can also use a pressure cooker
Cook on low heat for 45 minutes until the water had dried and you are left with a thick gravy. Garnish with coriander and its time to serve.
